Archaeological evidence suggests honey was among the first substances to be fermented by humans, it‘s origins are lost in prehistory. French anthropologist Claude Levi-Strauss makes a case for the invention of Mead as a marker of the passage "from nature to culture." Sursdalar Mead - traditional Northern Europe 100% natural organic beverage, brewed in Russia since 1024. Suzdal Meadery craft and age meads using time-honored brewing methods, known as “Genuine Viking’s Mead”.

 

Mead made from honey and water via fermentation with yeast. Yeast naturally exist in raw unpasteurized honey. They don’t ferment because of the high sugar content and low water content in pure honey. This combination produces such a high osmotic pressure that the yeast can lie dormant, but cannot actively metabolize honey. By adding water, reducing the osmotic shock enough for the yeast to begin fermentation. The yeast breaks down the honey sugar into alcohol and carbon dioxide gas, giving the drink its natural carbonation.

And it is important to understand that natural honey yeast cannot live in a solution containing more than 6% ABV and its calling “Genuine Mead”. Beverages with ABV higher than 6% - just a trendy hipster’s drinks and calling “honey beverage”. Genuine MEAD is Russian Mead only.

Súrsðalar (modern SUZDAL) – genuine Mead country of origin. Sursðalar (Old Norse: Suð - southern, Talle - valley), is a Russian city founded by Vikings in 1024, one of the major trade and cultural center of "Gardarike", pre-Christian Russia state of east Slavic Varangians tribe. Gardarike, as a South-East part of Vikings‘ empire, was a main purveyor of Meads. Modern Suzdal‘s Mead makers carefully keep genuine Vikings‘ traditions and recipes.

Garðaríki (anglicized Gardarike) is the Old Norse term used in medieval times for the states of Varangians tribe. 
Varangians was the name given by Greeks to Vikings, who between the 9th and 11th centuries settled among northern Russian rivers. Old Norse "Væringjar", originally a compound of  Vár "faith", and Gengi "companion", thus meaning "sworn companion". According to the 12th century Chronicle, a group of Varangians known as the Rus' (Russia) settled in Holmgarðr (modern Novgorod) in 862 under the leadership of Rurik (Rørik  830 – 879) a legendary Varangian duke who founded the Rurik Dynasty, which ruled Russia (Grand Duchy of Moscow) until 1610.
